The distillery is not open to the public. Designed by architect Charles Chree Doig in 1891 today the production is about 4.000.000 litres of alcohol per year as a result of reconstruction in 1965 and 1966. Another pair of stills was then installed. There is a modern stainless steel full lauter mash tun from the German manufacturer Steinecker which is also to be found at Aultmore Distillery (see www.krones.com). The pot stills are among the biggest in the industry, the wash stills and the spirit stills keep 56.370 litres each. „The stills charge is 22.730 litres,“ states Misako Udo. The result is that the alcohol vapours can largely react with the copper surface to create a clean and fresh spirit with less sulphur notes.
Craigellachie was bottled in the Flora and Fauna series and is sometimes available by bottlers. For a long time there has not been an original bottling as the Flora Bottling was getting rare. This policy is hardly believeable as the Craigellachie Single Malt is absolutely delicate and highly praised in the blending industry. However, there is now an original distillery bottling available, a 14 year old single malt published in 2004 which replaces the Flora and Fauna bottling.
The character is citrussy, creamy, oily and there is some sweetness and maltiness. The malt contributes largely to the blends White Horse and Dewars.
