About 3% of the casks stored in Scottish warehouses are Sherry casks. They come from Spain, from Andalusia. Distilleries like Bunnahabhain, Dalmore, GlenDronach, Glenfarclas, Highland Park or Macallan, to name a few, are renowned for the maturation of their whisky in Sherry butts or Sherry casks. Some distilleries even have special delivery contracts with Spanish Sherry Bodegas. The Dalmore Distillery for example uses exclusively cask from Gonzáles Byass in Jerez.
The casks were traditionally made of Spanish oak wood......but today most casks are set up with American white oak - quercus alba.

The Bodega Gonzalez Byass is famous of its Sherry wines: Tio Pepe Fino, Croft Original Sherry, Solera 1847, Alfonso Oloroso, Cristina Oloroso, Gaditano Fino, Nectar Pedro Ximenez.
